Superiore DOCG “Villa da Filicaja"
The grapes used to make Chianti Superiore DOCG
“Vincenzo da Filicaja” are harvested
by hand into crates with a specific harvest-transfer-destemming
criteria, which enables the destemming and the
pumping of the must into fermentation tanks within
a maximum of 15 minutes after picking the grapes
from the vine.
Chianti Superiore DOCG “Villa da Filicaja”
is made from a blend of San Giovese (approx. 90%),
Canaiolo (approx. 5%) and Merlot (approx. 5%).
The Merlot (approx. 5%) undergoes malo-lactic
fermentation in two year old barriques (90% Allier
10% Troncais).
