Santo del Chianti DOC "Villa da Filicaja"

The grapes used to make Vin Santo del Chianti
DOC were chosen bunch by bunch and harvested during
a week at the end of the lunar cycle in autumn
1988. Great care was taken not to damage the berries,
and they were then laid out immediately on racks
to dry.
During a cold December day in 1988 the withered
grapes (50% Trebbiano and 50% Malvasia) were destemmed
and the must was placed in new oak barrels, which
were then sealed until racking off.
